4 eggs

This recipe is easy to prepare. You will need 20 minutes to prepare the entire dough and afterwards, the estimated baking time is approximately 55 minutes (it depends a lot on the mold that is used)

Before making the dough, we can start by preheating the oven to 180º. This will save us time and will facilitate the steps when we have the dough ready to bake. Regarding the mold, we must grease it with a pinch of butter. It is recommended to cover the bottom of the mold with baking paper so that later it is easier for us to remove it and plate it.

Preparation of the dough for the lemon sponge cake

  1. To prepare this homemade cake, first of all, we must grate the skin of the lemons. Next, we mix it very well with the 250 grams of sugar. It is important to stir well so that the sugar takes on the flavor and aroma of the lemon.
  2. Once the previous step is done, we mix in a bowl the 100 grams of melted butter, the 200 grams of EVOO, and a tablespoon of lemon juice that we will remove from the lemons that we have grated.
  3. Next, we will sift the flour with the yeast and add a pinch of salt.
  4. The sugar that we have mixed with the lemon zest, we will place it together with the eggs in a container. This will have to be beaten at high speed with the mixer or with the mixer if you have one at home. We must slow down when we notice that the volume has doubled and we will add the extra virgin olive oil and butter.
  5. When the previous step is ready, we will slowly add the flour with the yeast and salt. We will stir everything very well and let it rest for a few minutes.

Baking the lemon cake

  1. Next, we will put all the dough in the mold that we have prepared previously. The baking time, as said at the beginning, will depend on the type of mold we use. Approximately, the homemade sponge cake should be baked for 55 minutes at 180º.
  2. To check if our sponge cake is fluffy and ready to take out, we can use a needle or a fork. If the utensils come out without being stained with dough, it is ready.
  3. We remove the lemon cake from the oven, let it rest for approximately 5 minutes and unmold it. We let it rest for approximately 20 minutes. Once it has cooled down, we can place it on a tray and cover it with icing sugar or chocolate. If you want to give it a much more artistic touch, cover it with chocolate lacasitos or a little cream.
