The authentic Manchego pisto only has green peppers and tomatoes, although depending on the geographical area there are variants with red peppers, onion and even garlic, but it can be said that it always has tomato and pepper.

Pisto manchego

An exquisite dish, simple to prepare and very nutritious that provides us with vitamins, minerals and fiber.

Ingredients

250 g of bell peppers
250 g of zucchini
250 g of ripe tomatoes
3 cloves of garlic 150 g of onions
Salt
Extra virgin olive oil Casas de Hualdo - Cornicabra

Preparation mode

    1. Cut the peppers and zucchini into small pieces.
    2. Peel the tomatoes, remove the seeds and crush them.
    3. Peel and chop the onions and garlic cloves.
    4. Brown the onion and garlic in a flat pan with boiling oil.
    5. After two minutes, and always over low heat, add the peppers, zucchini and tomatoes.
    6. Season, cover the casserole and leave it to simmer until all the ingredients are just right.
